UP Culinary Team Triumphs at Food Wars Asian Hawker Street Food Challenge

Third year students  Audrey Chan, Trishia de Guzman and Kathleen Mogol were  declared the champions of the Food Wars Asian Hawker Street Food Challenge at the  67th Young Hoteliers Exposition (YHE) and the 18th Manila Food and Beverages Expo (MAFBEX) held last 16  June 2024. The group competed against 10 other hospitality and culinary schools in a 60 minute cooking competition wherein the team prepared and presented an Indonesian chicken dish with coconut rice and pickled vegetables. The challenge was to innovate and elevate Asian street food and present it night market style and prepare 4 judges plates and 30 sample plates for the audience.   Ayam Na!, the group name chosen by the team  conceptualized the dish during the 2nd semester of school year 2023-2024. This is the first appearance of a UP team in MAFBEX in over 10 years. 

53 Years of Serving Success: UP SHARP’s Year in Review

On June 18, 2024, the UP Society for Hotel and Restaurant Progress (UP SHARP), the premier organization for BS HRIM students at UP Diliman, marked a year of significant milestones with the successful execution of two major events: the bi-semester Induction Ceremony for new members and the annual Year-Ender Event celebrating the achievements of the organization for the recently concluded academic year.


The event began with the formal induction of 16 new members which boosted the organization's population by 94% since 2022 and bringing the total membership to 97. This remarkable population growth underscores the revitalization of the organization culture in the university, more specifically, UP SHARP’s vibrant culture within the DHRIM community.


Following the induction, the outgoing Executive Committee presented their year-end reports, which highlighted the organization's achievements over the past year. Key accomplishments included securing sponsorships and partnerships with prominent brands such as McCormick Philippines, Seda Vertis North, Holiday Inn & Suites Makati, Hilton Manila, Megaworld, Hann Resorts, and new brand partners like Cheng Ban Yek and Company Inc. (producer of Baguio Oil), Royaltea Katipunan, Coca-Cola Philippines, Okada Manila, City Garden Hotel, The Manila Hotel, and Zip Travel.


One standout success was the continued operation of the Chick’n Bokboket by UP SHARP in its second installment. The project prides itself as the only student-led and student-run food and beverage concessionaire at the annual UP Fair, which was attended by up to 15,000 attendees over six consecutive nights. This major income-generating project of UP SHARP has been an important aspect of elevating the status of the organization as not only a home organization of HRIM students, but also as a training ground of HRIM students that supplements the theoretical and practical courses taught in the HRIM program. 


Looking ahead, UP SHARP is already planning the World Expert Lecture Series - Learning from the Masters (WELS-LFM) 2024, set for September. The event will feature Dr. Cihan Cobanoglu, Dean of the School of Hospitality and Tourism Management at the University of South Florida.


The latter part of the day was dedicated to year-ender activities organized by the Year-Ender Team. Members participated in an amazing-race-themed team-building event designed to strengthen bonds among current and new members, providing a well-deserved break after successfully pushing through with the recent academic year.

Career Fair 2024: UP Society for Hotel and Restaurant Progress and ESD Honor Society - UP Alpha Chapter Empower Future Industry Leaders

On June 3, 2024, the College of Home Economics at Gusali 2, Rooms A, B, and C, transformed into a hub of opportunity and excitement as students embarked on their future career journeys in the hospitality, food service, and tourism industries. The career fair, themed "Salamin, Salamin: Framing Our Future Career," was a collaborative effort between the UP Society for Hotel and Restaurant Progress (UP SHARP) and the ESD Honor Society - UP Alpha Chapter.


The event was an extraordinary success, providing students with invaluable opportunities to network with industry pioneers and explore potential career paths. Running from 9:00 AM to 3:00 PM, the career fair featured participation from prestigious companies, including Hilton Manila, Seda Vertis North, Holiday Inn & Suites Makati, City Garden Grand Hotel, The Manila Hotel, Hann Resorts, Megaworld Hotels & Resorts, Zip Travel Philippines, and Okada Manila.


The career fair attracted around 50 students, all from the BS Hotel, Restaurant, and Institution Management and BS Tourism programs, eager to connect with potential employers and gain insights into the industry. Each company set up booths, provided informative materials, and engaged with students through one-on-one discussions, presentations, and Q&A sessions. Many students were able to gather crucial information to guide their future career choices.


The collaborative efforts of the UP Society for Hotel and Restaurant Progress and the ESD Honor Society - UP Alpha Chapter were instrumental in the success of the career fair. Their dedication to fostering strong industry connections and supporting students' career aspirations was evident in every aspect of the event. 


The "Salamin, Salamin: Framing Our Future Career" event exemplified the commitment of both organizations to student development and professional growth. Moving forward, the UP Society for Hotel and Restaurant Progress and the ESD Honor Society - UP Alpha Chapter plan to continue organizing similar initiatives to further enhance the career prospects of their students. They also aim to expand their partnerships with additional industry leaders to maximize the impact of their future events.


Heartfelt gratitude is extended to all the participating companies, volunteers, and organizers who contributed to the success of the career fair. This accomplishment marks a significant milestone in the ongoing efforts to support and empower the next generation of professionals in the hospitality, food service, and tourism industries.

UP Diliman's DHRIM Faculty Share Insights at 2024 APacCHRIE Conference in Seoul 

Two faculty from the University of the Philippines, Diliman, Prof. Shirley V. Guevarra, PhD. and Asst. Prof. Lilibeth J. Baylosis, from the Department of Hotel, Restaurant and Institution Management (DHRIM), presented their research paper at the 2024 APacCHRIE Conference held on 24-26 May 2024 at Yonsei University in Seoul, Korea. The 22nd APacCHRIE Conference was attended by more than 550 delegates from 20 countries. 

Professor Guevarra is the Dean of the College of Home Economics and the faculty of the Department of Hotel, Restaurant and Institution Management (DHRIM). She has been a Board Member of APacCHRIE for several years and is currently the Director of Member Services and Development. She is also the founder of ICHRIE's Eta Sigma Delta (ESD) Honor Society-UP Alpha Chapter. Through the guidance of the International Council for Hotel, Restaurant, and Institutional Education (ICHRIE), the ESD recognizes hospitality and tourism students for outstanding academic achievement, meritorious service, and demonstrated professionalism.Dr. Guevarra presented their paper entitled “Emotional Labor of Employees in Selected Fastfood Restaurants in Metro Manila, Philippines.” Dr Guevarra co-authored the research paper with Jennifer B. Medino, Master of Hotel Restaurant and Institutional Management (MHRIM) student at the same university.

Likewise, Asst. Prof. Lilibeth J. Baylosis, Chairman of the DHRIM, presented her paper,  “Food Communication Ritual in the Filipino Quick Service Restaurant in the United States of America (USA).” Asst. Prof. Baylosis is also the founding adviser of the (ESD) Honor Society-UP Alpha Chapter

The Asia Pacific Council on Hotel, Restaurant, and Institutional Education (APacCHRIE) is the leading hospitality and tourism education association in the Asia Pacific Region with more than 75 University members from 18 countries.  

UP Diliman's DHRIM Strengthens International Ties with Benchmarking Visit to South Korean Universities

Last May 23, 2024, the Department of Hotel, Restaurant and Institution Management (DHRIM) led by Prof. Shirley V. Guevarra, PhD, Faculty of DHRIM and Dean of the College of Home Economics with Asst. Prof. Lilibeth J. Baylosis, Chairman of the  DHRIM had a benchmarking activity with Jeonju University, South Korea represented by Professor Young-Kunk Shim, PhD, Dean of JeonJu University, the different department heads and students taking Foodservice and Culinary Management in the College of Tourism and Culture.  Renewal of the collaboration between the University of the Philippines and Jeonju University was also discussed in the areas of collaborative research and academic initiatives through student mobility and joint program arrangement, extension and faculty exchanges. The two universities through the DHRIM had successful student exchanges and extension activities prior to the pandemic. The finalization of MOU/MOA is being handled by University of the Philippines Office of International Linkages (OIL), Diliman.

Strengthening the DHRIM international linkages and benchmarking were done to continue the quality culture of the department. The Bachelor of Science in Hotel, Restaurant and Institution Management (BS HRIM) completed the AUN-QA Programme Assessment last November 21-23, 2023, and found to be in accordance by the requirement of the standard details of the ASEAN University Network Quality Assurance Standard 

Jeonju is well known for its Hanok Village and Bibimbap. While Jeonju University is known as “The Place of Superstars.”

Dean Guevarra and Asst. Prof. Baylosis also visited Daejeon, South Korea,  for culinary, coffee and walking tour experience. Like Jeonju University, Woosong University of Daejeon South Korea has signified to renew its collaboration with UP through  UP OIL Diliman. Previously, DHRIM sent several visiting Professors and exchange students to Woosong University.

International Dialogue Conference of UN Tourism Sustainable Tourism Observatories and the 2024 China Observatories Training Programme

Professor Ramos-Tumanan presented the overarching framework on which the core of the Batanes Tourism and Hospitality Monitoring Center mandate is built, emphasizing a participatory approach incorporating various methodological references in addressing long-term sustainability in the Batanes Islands.

Professor Ramos-Tumanan presented sustainable practices in the Batanes Islands during the roundtable discussion. She discussed the challenges and the commitment of the Batanes Tourism and Hospitality Monitoring Center to measure eleven key issue areas by UN Tourism-INSTO, ranging from resident satisfaction to governance and solid and wastewater management. She concluded that the Ivatans' notion of sustainability is anchored on how well tourism and hospitality development addresses their daily needs and should be consistent with their cultural and natural assets.

Reconnect, Reminisce, and Celebrate: The Alumni Homecoming 2024

Another successful event was held at The Tearoom in the College of Home Economics last February 17, 2024 for the Alumni Homecoming of BS HRA, BS HRIM, MFSA, and MSHRIM with 55 attendees. The event was spearheaded by Silver Jubilarian Class of 1999 represented by Rina Lacia-Bugayong and Girlie Encallado-Lee with the guidance of Raymund Gerard I. Guerrero (HRA 91) as the Faculty-in-Charge of the Alumni Association at the Department. The honorees this year were the Classes of 1974 (Gold Jubilarian), 1979 (Sapphire), 1984 (Ruby), 1989 (Emerald), and 1994 (Pearl).

A fun and festive atmosphere welcomed the Alumni with the all-time favorite food and beverage offerings from The Tearoom such as Grilled Cheese, Cheese Pimiento Sandwiches and many more; photo booth; sampling from Potato Corner (Mr. Joey Alvero, HRA 84); and Emperador (Mr. Gerry Ele II, HRA 91).  An auction was also held where the proceeds will be used to sponsor the department activities for the students, items for auction were donated by Silver Secrets (Ms. Sally Son, HRA 76). 

One of the event’s highlights was “Ikot Gunita” where Alumni rode back to the past as they roamed around the campus.  Sumptuous Filipino Cuisine was served while raffle with fabulous prizes from our generous sponsors namely Fairmont Accommodation (Ms. Aubrey Ada, HRA 97); SEDA Buffet (Mr. Ken Capulong, HRA 2022); Gift bags from Proctor and Gamble (Ms. Rina Bugayong HRA 99) and CHE bags.

The Dean of the UP College of Home Economics, Dr. Shirley V. Guevarra (MFSA 90), the Department Chair of HRIM, Lilibeth Jordas-Baylosis (HRA 84) and UP Home Economics Alumni Association President, Elenor Malicdem delivered inspirational messages. Former Department Chairs, Dr. Maria Lourdes D. Catral (1999-2009) and Dr. Corazon F. Gatchalian (2010-2013) reminisced the institution of HRA and how it evolved through the years. As a concluding activity, a Business Meeting was held and it was approved that the UP Hotel, Restaurant and Institution Management Alumni Association be organized and to request the UP Home Economics Alumni Association (HEAA) to recognize as its sub-chapter.

DHRIM Excels at PITH-ReCon 2024: Celebrating Achievement

The Department of Hospitality, Restaurant, and Institution Management (DHRIM) is thrilled to announce the exceptional performance of its faculty and alumni at the 2nd Philippine International Tourism and Hospitality Research Conference (PITH-ReCon) 2024.

 

Best Paper Award

Edgar Allan D. Mendoza, MHRIM alumnus, and Dean Shirley V. Guevarra, PhD, received the prestigious Best Paper award for their outstanding research titled "Bourdieusian Analysis of a Hospitality Exchange in an Urban Tourism Destination." Their insightful work, presented at the conference themed "Tourism and Hospitality Green Investment: The Future of the Industry," stood out among other researchers, showcasing DHRIM's commitment to excellence in academia.

 

Best Oral Presenter

Furthermore, Mr. Mendoza was honored as the Best Oral Presenter in his Cluster for his exceptional presentation skills and in-depth knowledge of the subject matter. His ability to engage the audience and communicate complex ideas underscored DHRIM's dedication to nurturing top-notch talents in the field of tourism and hospitality.

 

These achievements reflect DHRIM's commitment to academic excellence and industry relevance. We extend our heartfelt congratulations to Dean Shirley V. Guevarra, PhD, and Edgar Allan D. Mendoza for their remarkable accomplishments, making the DHRIM community proud.

DHRIM visits the National Kaohsiung University of Science and Technology and the National Kaohsiung University of Hospitality and Tourism 

Last February 20-24, 2024, some members of the DHRIM faculty traveled to Kaohsiung, Taiwan to revisit and meet with the officials of the National  Kaohsiung University of Science and Technology  (NKUST) and the National Kaohsiung University of Hospitality and Tourism (NKUHT). Led by Assoc. Prof. Mary  Delia G Tomacruz, DBA,   the team composed of Asst. Prof. Giovanni Francisco, Dean of the Asian Institute of Tourism, Asst. Prof. Lilibeth J. Baylossis, chairperson of the DHRIM, Asst. Prof. Rosanne Eleazar, Asst. Prof. Allyson Miralles- Hije, Ms. Larissa Maranan-Montano, and Ms. Ronalyn Tamayo, RND, participated in meetings with the officials of these universities to discuss projects and collaborations. 


The Kindness Hotel generously hosted the team accommodations while Dr. Eing-Ming Wu gave his time and expertise to organize and accompany the team around Kaohsiung. 


Aside from the meetings with the universities, the team had the chance to visit a local community to learn some arts and crafts, tour the Kaohsiung Exhibition Center, and spent a day in Taitung County, the east coast of Taiwan.

Eta Sigma Delta (ESD) Honor Society - UP Alpha Chapter Welcomes New Leadership Members in Induction Ceremony 2023-2024

In a celebration of academic achievement and commitment to excellence, the Eta Sigma Delta (ESD) Honor Society's UP Alpha Chapter of the International Council on Hotel, Restaurant and Institutional Education (ICHRIE) held its Induction Ceremony on February 5, 2024. 

 

The program was opened by Prof. Shirley V. Guevarra, Dean of the College of Home Economics, University of the Philippines and Director of Member Services and Development of the Asia Pacific Council on Hotel, Restaurant and Institutional Education (APacCHRIE). She highlighted the essence of the ESD and its value to the students. The ESD UP Alpha Chapter is ICHRIE’s first Emerging Nations ESD Student Chapter; APacCHRIE’s third; and the first founded in the Philippines. It was formally founded by Dean Guevarra on December 16, 2021.

CHE DHRIM Students Shine Again, Claiming Manila Young Sommelier 2023 Championship for Second Consecutive Year

Students from the Department of Hotel, Restaurant and Institution Management of the College of Home Economics have once again proven their mastery in wine by securing the championship title at the Manila Young Sommelier 2023 competition, marking their second consecutive victory.


Aron John Lumigao emerged as the champion, showcasing exceptional talent and knowledge in the field. Adding to the celebration of success, Luis G. Soliman earned a well-deserved spot among the Top 10 finalists.


Behind the scenes, the students were under the guidance of the DHRIM coaching team. Asst. Prof. Rosanne Nicolette Eleazar, Asst. Prof. Daniel Karlo Lucas, and Mr. Jan Gerardo Flores III played instrumental roles in preparing the students for the competition, providing invaluable insights and honing their sommelier skills.


The students' training was conducted by the esteemed Godofredo Pineda, a Certified Specialist of Wine and a certified sommelier affiliated with Moet et Chandon Philippines. Notably, Mr. Pineda is an alumnus of DHRIM, further emphasizing the institution's commitment to nurturing and producing top-tier talents in the field.


The victory not only underscores the students' dedication and hard work but also reflects the exceptional standards upheld by CHE DHRIM in the realm of hospitality education. With this second consecutive win, the institution solidifies its reputation as a breeding ground for future leaders and experts in the dynamic world of wines.

DHRIM Students Win Sustainable Innovation in Tourism and Hospitality Challenge  

The College of Home Economics and the Department of Hotel, Restaurant and Institution Management congratulates Sebastian Garcia - BS HRIM winning the Silver Award for the Sustainable Innovation in Tourism and Hospitality: 2023 Global Student Challenge held by the National Kaohsiung University of Hospitality and Tourism. This competition was hosted by the International Master's Program of Tourism and Hospitality (IMHT) at the National Kaohsiung University of Hospitality and Tourism (NKUHT) and seeks to inspire and cultivate innovative solutions within the tourism and hospitality industry. We are emphasizing sustainability, inclusivity, and resilience.


We also would like to congratulate Ma. Julia Bonite for being one of the Lavander Cottage Excellence in Sustainable Tourism Award awardees in the same competition. The Lavander Cottage Excellence Award is given to students who have demonstrated excellence in their research and presented an innovative, impactful thesis that contributes to the understanding and advancement of sustainable tourism practices. 

Dean Guevarra Concludes 16 Years of Service as APTA’s Philippine Country Representative

Dean Shirley V. Guevarra, capped her 16 year-term this year as Philippine Country Representative of the prestigious Asia Pacific Tourism Association (APTA), a post which she held since 2007. She was succeeded by Asst. Professor Raymund Gerard Guerrero, her colleague in the Department of Hotel, Restaurant and Institution Management.  Dean concurrently held the position of APTA’s External Secretary since 2011. In the 2023 Asia Pacific Tourism Association Conference in Shangri-la Chiang Mai, Thailand on July 4 to 7, 2023, Dean Guevarra co-moderated the Women Leadership in Hospitality and Tourism Plenary Session which she also co-organized with two colleagues in the Board, Dr. Woomi Jo of the University of Guelph, Canada and Dr. Yulan Yuan of Tunghai University, Taiwan. Now in its second year, the group featured GM Anna Vergara of Sofitel Manila as Keynote Speaker at the 2022 APTA Conference. GM Vergara is an alumna of the DHRIM’s Bachelor of Science in Hotel and Restaurant Administration. She holds the distinction of being the Philippines’ first female to break the glass ceiling in the male and foreign-dominated general manager position of international hotel brands in the country.

Sangkap Pinoy: A Flavorful Celebration of Buwan ng Wika with DHRIM's Culinary Expertise

Last August 2023,  The College of Social Sciences and Philosophy Office of Service-Learning, Outreach and Pahinungod (CSSP OSLO-Pahinungod) Office conducted a lecture series and workshops to celebrate  Buwan ng Wika. The series called SangKAPPinoy: Yaman ng Wika at Panlasang Pinoy, was a week-long celebration that focused on the rich Philippine languages and various Filipino food preparation and ways of consumption. An invitation was extended to the Department of Hotel, Restaurant and Institution Management to participate in the activities by way of a cooking demonstration.  On August 23, Assistant Professor Rosanne Nicollette M. Eleazar demonstrated how to make pastil, a chicken and rice recipe from Maguindanao.  The demonstration was conducted in the Palma Hall lobby and attended by staff and some faculty of the CSSP.

The festivities kick off at 10:00 AM with the official book launch, where you'll have the opportunity to be among the first to obtain "The Ultimate Filipino Adobo" and meet Chef Claude Tayag in person for a personalized book signing. Following the launch, at 11:00 AM, Chef Claude will showcase his culinary mastery through a cooking demonstration and tasting session. It's a chance to savor the rich flavors of Filipino Adobo and witness a culinary artist at work.

The excitement continues at 11:30 AM with another book signing session, ensuring that everyone has the opportunity to have their copy of the book signed by the author. Later in the day, at 2:00 PM, you're invited to join us at the UP Asian Institute of Tourism Lounge for an insightful lecture on Filipino cuisine's cultural and global significance. This session promises to be a fascinating exploration of how Filipino food resonates worldwide.

For those who missed the morning session, don't worry! At 3:00 PM, UP AIT will be hosting a second book launching and book signing event in the Asian Institute of Tourism Lounge. Chef Claude Tayag is an award-winning chef and author known for his dedication to promoting Filipino cuisine. "The Ultimate Filipino Adobo" is his latest culinary masterpiece, delving deep into the world of one of the Philippines' most beloved dishes.

Dean Guevarra Holds Key Roles in Local and Asia-Pacific Tourism and Hospitality Organizations

The Department of Hotel, Restaurant, and Institution Management is proud of Dr. Shirley V. Guevarra, the current Dean of the College of Home Economics and an esteemed member of the DHRIM team. She has the honor of serving three prestigious organizations yet again this year - as Vice President of the Council of Hotel and Restaurant Educators of the Philippines (COHREP), as Director of Membership Services and Development of the Asia Pacific Council of Hotel, Restaurant, and Institution Education (APacCHRIE), and as the Country Representative and External Secretary of the Asia Pacific Tourism Association (APTA). 

COHREP successfully held its 31st COHREP conference and the 21st APacCHRIE Conference, which it co-hosted with the International Management School in Clark Global City, Pampanga, last May 25 to 28. Dean Guevarra served as co-Chairperson and Chairperson of the Paper Committee for the APacCHRIE Main Conference and the 16th APacCHRIE Youth Conference, respectively. 

The APTA Conference was successfully held in Chiang Mai, Thailand, last July 5 to 7. At this conference, Dean Guevarra anchored the panel session on women's empowerment with Prof. Woomi Jo of Guelph University, Canada. This marked the second of a 4-year series on Women Empowerment, a project of the Committee on Women Leadership for APTA, which Dean Guevarra spearheads with Professor Yoyo Yulan of Tunghai University, Taiwan and Dr. Myungkeun Song of Dong-A University, South Korea.

Batanes Islands Joins United Nations World Tourism Organization - International Network of Sustainable Tourism Observatories

The Observatory is managed by a multi-disciplinary team from the Asian Institute of Tourism, the Department of Hotel, Restaurant and Institution Management, and the Institute of Civil Engineering, all from the University of the Philippines Diliman.

DHRIM Team Participates in the 21st APacCHRIE and 31st COHREP Joint Conference 2023

The Department of Hotel, Restaurant, and Institution Management participated in the recently concluded 21stAsia Pacific CHRIE and the 31st Council of Hotel and Restaurant Educators of the Philippines (COHREP) joint conferences held in Clarkfield, Pampanga, on May 25-27, 2023

 

The DHRIM delegation was led by CHE’s beloved Dean, Dr. Shirley V. Guevarra, who holds board membership in both organizations. With Dean Guevarra, COHREP board member, Assistant Professor Raymund I. Guerrero led the organizing team for the two conferences. Dean Guevarra served as the Co-Chairman of the Paper Committee for the APacCHRIE Main Conference and Research Committee head, as well as the Chairman of the Paper Committee for the 14th APacCHRIE Youth Conference.

 

Dean Shirley V. Guevarra was re-appointed as Director for Member Services and Development of APacCHRIE and was elected Vice President of COHREP for 2023-2024. Asst. Prof. Raymund Guerrero, on the other hand, was elected Auditor of COHREP.

 

This year’s conference theme was 4N in Hospitality and Tourism: Where Creativity Meets Technology. Plenary discussions and research parallel sessions tackled the trends unfolding in the hospitality and tourism industry amid the 4th industrial revolution—plenary speakers comprised scholars and industry practitioners from Asia and the Pacific. The DHRIM delegation was among the academics who shared their research on artificial intelligence in the restaurant industry, netnography research methodology, consumer behavior, tourism destination resilience, and gastronomy. They also served as parallel session moderators in the Main Conference.
